With the pronounced freshness and incredible texture, all you need is a simple sauce for a nutritious, flavourful dish.
To ensure the quality of the fish, the fish experts conduct a stringent seven-step check – the 7-Step Wholefish Selection Process. They are as follows:
- Clear eyes: Check for bright, shiny and bulging eyes with black pupils.
- Bright red gills: The gills are clean, free of slime and have a smell reminiscent of fresh seaweed.
- Firm flesh: When pressed, the flesh springs back nicely and leaves no indentation.
- Radiant skin: The radiance of the skin indicates the freshness of the fish. The experts select those with a natural glow and intact scales.
- Whitish-pink belly: The experts choose bellies that are of a nice colour. They also avoid fish that have a bloated belly, which signals that it is no longer fresh, or was dead when it was caught.
- Equally distributed slime: The fish’s natural slime must be clear and odourless.
- Smell: Fish should smell clean with a briny, oceanic hint.

Wholefish.sg is the brainchild of Mr Tan Yong Xiang, who is behind one of the largest vegetable suppliers in Singapore. Through his vast network, he encountered many stakeholders in the fish industry, which sparked his first foray into the market.
