Established in 1986 from humble beginnings in the Maxwell Food Centre, the 2016 Bib Gourmard Award Winner welcomes voracious guests to feast the ubiquitous Hainanese chicken rice or porridge dishes in one of its three cosy alfresco-style domains peppered around Singapore.
Master chefs carefully execute the complex dish in a meticulous fashion beginning with the preparation of fragrant rice with pandan leaves and chicken stock before chartering their way through to blanching, roasting, or braising the chicken with a medley of herbs and spices to craft its tender texture, and garnishing the meal with generous helpings of scallions, carrot shavings, and a melange of sesame oil and soy sauce to balance the many components required to concoct its bold and rich flavours.
Aside from the main course, side dishes of beansprouts with cuttlefish, vegetables soaked in oyster sauce, and more, alongside icy beverages of Chinese tea, fresh barley, and milo can be requested to pair meals to complement palates.
